Why HTML reaches the feed
The description looks fine in your store because the browser hides the markup. Google receives the raw field.
WooCommerce descriptions are commonly created in Gutenberg, Elementor or a supplier import. Paragraphs, line breaks, spans and formatting blocks are useful on a product page, but a feed plugin may export those tags inside the description value.
Raw markup wastes space, creates awkward snippets and can make product data harder for a channel to interpret. Simply deleting every angle bracket is risky, because script or style content can remain as visible garbage. The output needs to preserve the words while removing the presentation layer.
